Peel the sweet potatoes using a peeler or knife.
Cut the sweet potatoes into slices, preferably thin for even cooking.
Place the sliced sweet potatoes in a bowl and rinse them in water.
In a bowl, combine half a cup of white sugar and one cup of brown sugar, mixing them together.
Add salt, ground cinnamon, and nutmeg to the sugar mixture.
Melt two sticks of butter and mix in vanilla extract.
Place the sliced sweet potatoes into a casserole dish.
Sprinkle the dry sugar mixture over the sliced sweet potatoes and mix them in evenly.
Add the melted butter mixture to the sweet potatoes and mix well.
Cover the casserole dish with foil and place it in a preheated 350°F oven for 30 minutes.
After 30 minutes, remove the foil and stir the sweet potatoes to mix in the syrup that has formed.
If a thicker syrup is desired, add more sugar.
Return the sweet potatoes to the oven without the foil for an additional 30 to 35 minutes, depending on desired tenderness.
Stir the sweet potatoes one last time before serving.
