Heat a pan with oil. Add the noodles and season lightly with okonomiyaki sauce. Shape them into a round pancake, then set aside.

In a bowl, mix the okonomiyaki flour, cold water, and egg. Stir just until combined; do not overmix.

Gently fold in the cabbage, seafood (shrimp/squid/oysters), beni shoga, green onions, and tenkasu. The mixture should be mostly cabbage, held together lightly by the batter.

Heat a non-stick pan over medium heat. Place the prepared noodle pancake back in the pan. Pour the okonomiyaki mixture on top of the noodles. Shape gently into a thick round. Cook for 5–6 minutes until the bottom is set.

Carefully flip the pancake using two spatulas. Cook for another 4–5 minutes until the seafood and batter are cooked through.

Brush with okonomiyaki sauce while still on the heat. Add Japanese mayo in zig-zag lines. Sprinkle with aonori and katsuobushi.
