Place the cooked sausage back in the Rock Box oven to crisp up.
Prepare roasted garlic by submerging peeled garlic cloves in olive oil and cooking in the Rock Box at a lower temperature.
Caramelize shallots in a pan with butter, salt, and red wine until they reach a nice caramelized texture.
Build the pizza by spreading a few spoonfuls of simple red sauce on the dough.
Add part-skim mozzarella cheese (preferably low moisture) on top of the sauce.
Spread the cooked sausage evenly over the cheese.
Add roasted garlic by breaking apart three or four smaller cloves and distributing them on the pizza.
Top with caramelized shallots, ensuring they are not burnt.
Stretch the pizza dough on a pizza peel, ensuring ingredients are not in the middle to prevent them from gravitating during cooking.
Transfer the pizza into the Rock Box oven to bake.
Once out of the oven, garnish the pizza with fresh herbs like rosemary and parsley, and drizzle with hot honey.
Prepare garlic oil by mincing garlic, adding chili flakes, dried tarragon, and extra virgin olive oil, then brush the edges of the pizza with it.
Finish the pizza with a sprinkle of pecorino and parmesan cheese.
