1

Prepare the ingredients: cut boneless skinless chicken thighs into bite-sized pieces, leaving some fat on for flavor.

2

Season the chicken with a blend of Cajun spices, massaging it in for even coating.

3

Heat avocado oil in a large skillet over medium heat.

4

Add 1 pound of diced andouille sausage to the skillet and brown for 5-6 minutes, then remove with a slotted spoon.

5

In the same skillet, add butter and then the seasoned chicken thighs, cooking until 80% done and browned.

6

Remove the chicken and set aside.

7

Add diced onion, bell pepper, celery, and jalapeno to the skillet, cooking until softened.

8

Stir in minced garlic and tomato paste, cooking for a couple of minutes.

9

Add fresh rosemary and thyme, Louisiana hot sauce, and chicken bouillon powder, mixing well.

10

Add 2 cups of rinsed long grain white rice to the skillet and toast for 2-3 minutes.

11

Pour in 4 cups of chicken broth, bring to a boil, then reduce to a simmer and cover for 15 minutes.

12

After 15 minutes, add the reserved chicken and sausage back to the skillet, mixing well and cooking until the chicken is fully cooked and the rice is tender.

13

Season to taste with smoked paprika and additional Cajun seasoning if desired.
