3 cloves garlic
1 cup mushrooms
1 medium zucchini
1/2 cup carrots
1/2 red bell pepper
1/2 jalapeno
4 cups spinach or kale
1/2 cup parsley
2 cans white beans (cannellini or navy)
1/2 cup salsa
1 cup oats
barbecue sauce (Bone Sucking Sauce)

Cook 1 medium onion, 3 cloves garlic, and 1 cup mushrooms in a skillet until softened.

Add a little moisture to help the mushrooms release their moisture and steam them.

Chop and add 1/2 jalapeno to the skillet for flavor.

Chop and add 1 medium zucchini, 1/2 cup carrots, and 1/2 red bell pepper to the skillet.

Add 4 cups of spinach or kale to the skillet, tearing the leaves into smaller pieces as you add them.

In a separate bowl, combine 2 cans of rinsed white beans, 1/2 cup salsa, and 1 cup oats.

Mix the bean, salsa, and oats mixture together until combined.

Once the vegetables have cooked down, allow them to cool slightly before mixing with the bean mixture.

Combine the vegetable mixture with the bean mixture and mix well to combine everything together.

Transfer the mixture to a loaf pan and spread evenly.

Top the mixture with a layer of barbecue sauce before baking.
