Chicken Sausage & Sweet Potato Soup

1 lb spiced chicken sausage
2 medium sweet potatoes
1 cup curly kale, chopped
2 tbsp butter
2 tbsp herbs
4 slices bread

In a large pot, heat 2 tablespoons of butter over medium heat.

Add the sliced spiced chicken sausage and cook until browned, about 5-7 minutes.

Remove the sausage from the pot and set aside.

In the same pot, add chopped onion and minced garlic, sauté until the onion is translucent, about 3-4 minutes.

Add the diced sweet potatoes, chicken broth, thyme, paprika, salt, and pepper to the pot.

Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes, or until sweet potatoes are tender.

Stir in the chopped curly kale and return the sausage to the pot.

Simmer for an additional 5 minutes until the kale is wilted.

Taste and adjust seasoning if necessary.
