Prepare a pre-cooked tart shell using sweet shortcrust pastry.
In a bowl, mix fresh lemon juice with caster sugar.
In a separate bowl, whisk together whole eggs and egg yolks with additional caster sugar until smooth.
Incorporate corn flour into the egg mixture.
Add the lemon juice mixture to the egg mixture and combine well.
Slowly add in the heavy whipping cream and vanilla essence, mixing until fully combined.
Melt the butter and mix it into the filling until smooth.
Pour the lemon custard cream filling into the pre-cooked tart shell.
Bake the tart until the filling is set but slightly jiggly in the center.
Let the tart cool to room temperature before chilling in the refrigerator for at least 2 hours.
