Espresso Coffee Baby Back Ribs

Remove the membrane from the ribs or score them with a 10-inch butcher knife.
Place the ribs in a 2.5-gallon plastic bag for marinating.
Add 1 cup of kahlua to the bag with the ribs.
Pour in at least a bottle of Mexican cerveza into the bag.
Seal the bag and marinate the ribs for at least 3-4 hours or overnight, moving the bag occasionally to ensure even marination.
Pat off excess moisture from the marinated ribs before seasoning.
Rub olive oil on the ribs to help the rub stick.
Sprinkle the ribs with a seasoning blend of salt, pepper, and garlic (SPG).
Apply a fine espresso grind coffee on the meat side of the ribs, patting it down.
Preheat the smoker to 275 degrees Fahrenheit.
Place the ribs in the smoker and cook for about 4 hours, maintaining the temperature.
Prepare a quick barbecue sauce by mixing barbecue sauce, brown sugar, red pepper flake, and the juice of one lemon.
Add more SPG seasoning and a can of cerveza to the barbecue sauce mixture.
Baste the ribs with the barbecue sauce mixture every 30 minutes during cooking.
After about 2-2.5 hours, wrap the ribs in aluminum foil with some barbecue sauce for 30 minutes to enhance moisture and tenderness.
Remove the ribs from the smoker after cooking and let them rest before serving.
