Open the coconuts by cutting the soft part with a knife and pour out the coconut water.
Use a plastic spatula to scrape the coconut meat from the shell.
Remove the brown part of the coconut meat to avoid bitterness.
Cut the coconut into smaller pieces for easier blending.
In a blender, combine the coconut pieces, coconut water, and blend until smooth.
Add 2 tablespoons of coconut concentrate, 2 teaspoons of vanilla, and 1 tablespoon of butter essence to the blender.
Blend well to mix all ingredients thoroughly.
In a mixing bowl, combine the blended coconut mixture with the cream base and sweetened shredded coconut.
Mix until the sugar is dissolved and everything is well combined.
Prepare the popsicle molds by inserting sticks and filling them with the mixture, ensuring each cavity has enough coconut.
Place the molds in a freezer or a specialized ice cream maker set to -10 degrees Celsius for 18-20 minutes.
Once frozen, remove the popsicles and let them sit for about a minute to allow for easier removal.
If the popsicles are wet, place them back in the freezer to dry before packaging.
