2 pieces medium size boneless skinless chicken breasts cut into 1-inch chunk
1 piece red bell pepper
1 piece green bell pepper
1 piece yellow bell pepper
1/2 medium size red onion
1 piece medium green zucchini
1 piece medium green zucchini
8 oz baby peeled carrots
3 cloves garlic
2 tbsp olive oil
2 stalk fresh rosemary
2 stalk fresh thyme
1/2 tsp dried basil
1/2 tsp dried oregano
1 tsp sea salt
1/4 tsp red chili flakes (optional)

Preheat oven to 450° F and place a large aluminum foil on the oven tray.

Chop all the veggies into large pieces and separate them on a plate or cutting board.

Cut the chicken into 1-inch chunks.

Using a garlic presser, crush the garlic.

In a small bowl, whisk together the garlic, dried basil, dried oregano, chili flakes, salt, black pepper, and olive oil; set aside.

Place the chicken and veggies on a large dish.

Add the garlic mixture to the chicken and veggies, gently toss to combine.

Place the veggies and chicken breast in one tray, trim the fresh herbs rosemary and thyme with kitchen scissors, and spread them over the chicken and veggies.

Bake at 425° F for 20 minutes or until the veggies are charred and the chicken is cooked through.
