It was created by chemists John Wheeley Lea and William Perrins, who aimed to replicate a sauce they encountered in India. This condiment has since become a staple in British cuisine, known for its complex flavor profile that enhances meats, marinades, and dressings. Today, it is widely used around the world, with various brands and recipes offering unique twists on the original formula.

Combine 250 ml of apple cider vinegar and 50 ml of mineral water in a bowl.
Add 2 crushed garlic cloves, 60 g of chopped onion, and 15 g of anchovy fillet.
Incorporate 40 g of brown sugar and 30 g of tamarind paste.
Add 1 teaspoon of black pepper, 1 teaspoon of clove, 1 tablespoon of sweet paprika, and a little salt.
Mix all ingredients in a saucepan.
Blend everything until fine.
Cook the mixture for about 8 to 10 minutes after it starts boiling.
Strain the mixture using a spoon to extract all the liquid.
Save the leftover paste for seasoning other dishes.
Transfer the sauce to a bottle, adding a bit of the leftover paste to preserve flavor.
