Start by preparing the fried dumplings mixture.
In a bowl, mix 2 cups of flour, 1 tbsp of sugar, 1 tsp of salt, 1 package of rapid rise yeast, and 0.5 tsp of nutmeg.
Add 1 tbsp of vegetable oil and warm water gradually while mixing until a dough forms.
Cover the dough with cling wrap and a tea towel, allowing it to rise.
Prepare the calaloo by slicing the pumpkin, green onions, red and yellow bell peppers, and grape tomatoes.
Boil the pumpkin in salted water until halfway cooked, then drain.
In a pot, heat olive oil and sauté garlic and green onions until fragrant.
Add the calaloo and salt, cover, and let it sweat to release liquid.
Add the cooked pumpkin and other vegetables to the calaloo, cooking until tender.
Once the dough has risen, roll it out on a floured surface and cut into circles.
Heat oil in a skillet for frying the dumplings.
Fry the dumplings until golden brown, flipping as necessary to ensure even cooking.
