3 lbs. boneless, skinless chicken breast and thighs, chopped into large cubes
3 ears of corn, sliced
3 large carrots, chopped at an angle
1 medium chayote (cho-cho), chopped into large chunks
2 large green onions, sliced at an angle
1 tbsp granulated garlic
1 tbsp black pepper
1 red bell pepper, diced (optional not traditional)
1 yellow bell pepper, diced (optional not traditional)
1 large onion, diced
5 pimento berries (allspice)
4 garlic cloves, sliced
1 whole scotch bonnet (optional)
3 large potatoes, diced
3 sprigs fresh thyme
8-10 cups water
1 medium pumpkin, diced in large pieces
1 medium Jamaican yam (or butternut squash), diced largely
1 pk. Grace Caribbean Cock Soup (spicy pimento flavor)
1 can of chicken noodle soup
1 teaspoon chicken bouillon
Salt & Pepper to taste
¼ cup cornmeal
1 cup flour
½ teaspoon salt
Warm water
Room temperature butter

For Dumplings: mix the flour and cornmeal together with a dusting of salt. Add a little warm water at a time until a soft dough forms. Set aside for 10 minutes. Take about a tablespoon dough and roll into medium-sized sphere shape then drop into boiling soup.

In a large stock pot, bring 4 cups of water to a boil and add buttercup squash, thyme, and chicken. Cover and cook on high for 10 minutes. Then, add dumplings. Cover and cook covered, stirring occasionally for 5 minutes.

Add another 4 cups water to the pot. Bring the pot back to boil, add bell pepper, chayote, carrots, corn, onion, garlic, potatoes, yam, and bouillon. Cook covered for 20 minutes, stirring occasionally. If vegetables are still hard, add in 2 more cups of water. Add in chicken noodle soup and scotch bonnet. Cook for about 10-15 minutes with the pot covered and stir occasionally.

Serve hot. Garnish with thinly sliced green onions.
