Vegan Collard Greens

1 onion, diced
2 tbsp olive oil
1 tsp salt
4 cups vegetable broth
1 tbsp apple cider vinegar
to taste Sriracha sauce
to taste liquid smoke
1 lb collard greens, chopped

Saute onions in olive oil over medium high heat in a large pot.

Add salt to draw the flavor out of the onions.

Fill the pot about halfway with water.

Add vinegar, soy sauce, agave nectar, Sriracha sauce (or cayenne pepper), and liquid smoke to the water.

Bring the mixture to a boil.

Add cleaned and cut collard greens to the pot.

Cover and cook for 1 to 3 hours until fork tender.
