½ cup yellow peppers, roughly chopped
2 x 400 gram cans chopped tomatoes
1 tsp dried oregano
½ tsp red chili flakes
1 tsp sugar
½ tsp black pepper
2 tsp salt
½ cup double/heavy cream
100 grams spinach, roughly chopped
¾ cup mozzarella cheese, grated
¾ cup cheddar cheese, grated

Boil water and add 1 tsp salt.

Add 500 grams of penne pasta and cook until slightly undercooked; drain.

In a large heavy bottom pan, heat 2 TBSP olive oil.

Add 2 TBSP chopped garlic and 1 cup thickly sliced onions; sauté until fragrant.

Add ⅓ cup chopped carrot, ½ cup orange peppers, ½ cup red peppers, and ½ cup yellow peppers; cook until softened.

Add 2 x 400 gram cans of chopped tomatoes; let it simmer for 5 minutes.

Stir in 1 tsp dried oregano, ½ tsp red chili flakes, 1 tsp sugar, ½ tsp black pepper, and 2 tsp salt; mix well and simmer for another 2 minutes.

Add ½ cup double/heavy cream and 100 grams roughly chopped spinach; mix well.

Combine slightly undercooked pasta with the vegetable mixture and mix evenly.

Transfer to a large baking dish (around 10 inch x 13 inch) and spread evenly.

Top with ¾ cup grated mozzarella cheese and ¾ cup grated cheddar cheese.

Bake in a pre-heated oven at 180°C (350°F) for 20-25 minutes or until cheese melts and turns golden brown; turn halfway through.
