1

Start with bone in, skin on chicken and brown it on all sides until the skin gets crispy.

2

Season the chicken in a large shallow dish or a two and a half gallon plastic bag with salt and black pepper.

3

Dress the chicken with the zest of both a lemon and an orange, and add beautifully sliced garlic.

4

Add a couple tablespoons of fresh oregano and a little olive oil to the chicken.

5

Sprinkle in red pepper flakes or finely ground black pepper.

6

Refrigerate the chicken for 30 minutes to one hour.

7

Prepare the vegetables: trim asparagus by holding it at both ends and breaking it where it naturally snaps.

8

Cut the asparagus into large bias pieces, a little bigger than bite-size.

9

In a large skillet, brown the chicken and use the drippings to dry fry or char the vegetables in very little oil.

10

Add the spring onions and snap peas to the skillet with the chicken.

11

Once the vegetables start to slump and have charred edges, add three tablespoons of vinegar to the skillet.

12

Emulsify the vinegar and create a pan sauce by melting in three tablespoons of butter.

13

Add about a cup of bone broth or stock to the skillet and let it bubble and simmer.

14

Finish the dish by adding the juice of half an orange and the juice of the entire lemon, squeezing cut side up to keep the seeds out.

15

Garnish with lots of mint and parsley, and add feta cheese or Ricotta Salata before serving.
