Preheat the oven to 375°F (190°C) and grease and flour a 13 by 9 inch baking pan.
Add softened butter to a mixing bowl.
Add 1/2 cup of raw sugar and 1 cup of brown sugar to the butter and mix well.
Add a pinch of sea salt and instant coffee granules to the mixture.
Add vanilla extract and 2 eggs to the mixture, mixing until combined.
In a separate bowl, mix together the all-purpose flour and baking soda.
Gradually add the dry mixture to the wet mixture on low speed until combined.
Fold in chocolate chips.
Spread the dough evenly into the prepared baking pan, using wet fingers to help flatten it out.
Bake in the preheated oven for about 15 to 17 minutes, or until a cake tester inserted in the middle comes out clean.
Remove from the oven and allow to cool before cutting into pieces.
