Variations abound across Italy, with regional toppings and styles, making it a favorite in homes and restaurants alike.

In a large bowl, add 600 grams of all-purpose flour and 1/4 teaspoon of dry active yeast, stirring to combine.
In another bowl, add 450 grams of warm water and a pinch of sea salt, stirring to dissolve.
Pour the warm salted water into the flour mixture and drizzle in 2 tablespoons of extra-virgin olive oil.
Use your hands to mix the ingredients until they form a shaggy dough.
Transfer the dough to a lightly greased large mixing bowl.
Perform a series of folds on the dough to incorporate air and develop gluten, repeating this process three or four times.
Cover the bowl with a wet towel and let the dough rest for 20 minutes, then repeat the folding process.
Cover the bowl tightly with plastic film and let the dough ferment overnight in the refrigerator.
After the first rise, grease a 9 by 13 inch baking pan with about 1 tablespoon of extra-virgin olive oil.
Transfer the dough to the greased pan and stretch it to fit the corners, covering it and letting it rise for about an hour.
Dimple the dough with wet fingers, pressing down to the bottom of the pan.
Top the dough with fresh rosemary, garlic confit, and a drizzle of garlic-infused oil, finishing with coarse sea salt.
Bake in a preheated 450Β°F oven for 15 to 20 minutes until golden brown and the internal temperature reaches 190Β°F.
Let the focaccia cool slightly on a wire rack and drizzle with more extra-virgin olive oil before serving.
