1

Start by ensuring the egg whites are at room temperature; if needed, place 3 full eggs in warm water for about 10 minutes.

2

Crack the eggs and separate the egg whites, ensuring no yolk is present.

3

Wipe the mixing bowl and whisk attachment with white vinegar to eliminate any grease.

4

Add the 3 egg whites to the bowl, then start whipping on medium speed until barely frothy.

5

Add less than 1/4 teaspoon of cream of tartar and a pinch of salt to the egg whites and continue whipping until they double in size.

6

Gradually add 1/2 cup of granulated sugar, a quarter teaspoon at a time, while whipping until the mixture is glossy and stiff peaks form (about 6-8 minutes).

7

Once stiff peaks are achieved, quickly add a drop of red food coloring and 1 teaspoon of almond extract, mixing gently to combine without deflating the mixture.

8

Divide the meringue into two piping bags; add a drop of blue food coloring to one bag to create a purple shade.

9

Prepare a baking sheet lined with tin foil (do not spray it).

10

Pipe heart shapes and stars onto the prepared baking sheet, optionally adding sprinkles or edible luster dust for decoration.
