Add unbleached all-purpose flour, turmeric powder, annatto powder, salt, and brown sugar to a bowl and stir to combine.
Add a generous amount of vegan butter to the flour mixture and combine until it resembles breadcrumbs.
Gradually add ice-cold water to the mixture and knead until a semi-soft dough forms; cover with saran wrap and refrigerate.
The next day, cut the dough in half and work on one half, adding more vegan butter to create layers.
Roll out the dough and refrigerate again to maintain flakiness.
Prepare the filling by chopping vegetables for green seasoning and processing them in a food processor until smooth.
Soak soya chunks in warm water for a few minutes, then drain and process until smooth.
In a pot, heat vegetable oil and add the green seasoning; sauté for 1-2 minutes.
Add the processed soya chunks to the pot along with brown sugar and stir until evenly coated.
Mix ketchup with water and agave nectar, then add to the pot, seasoning to taste with vegetable bouillon and any other preferred seasonings.
Cover the pot and let the filling simmer on low heat for 10 minutes.
Roll out the dough to form patties, cutting into rectangular shapes or using a container for even shapes.
Place filling on one side of the dough, fold over, and seal the edges with a fork.
Brush the tops with melted vegan butter and pierce three holes for air circulation.
Bake the patties at 400°F for 25 minutes until golden brown.
