Olive oil is a healthier fat alternative.
Add a bit of sugar to the bottom of a small saucepan.
Set the pan over medium-high heat and keep on the heat until the sugar begins to melt and spots look wet.
Use a spoon to cover the wet spots with more sugar, continuing this process until all sugar is added to the pan.
Stir the sugar with a heat-proof spatula to encourage it to caramelize and melt completely.
The sugar will clump and look like wet sand initially; keep stirring until the large crystals dissolve completely and the caramel turns a deep amber color.
As soon as the sugar reaches this stage, immediately add coconut oil, coconut cream, and miso paste.
Be careful as the caramel will sputter and steam when these ingredients are added; keep stirring until thoroughly incorporated and the sauce is dark, smooth, and silky.
Pour the caramel into a heat-proof container and allow to cool to room temperature before using.
