Start by seasoning your board with salt, pepper, and chopped rosemary.
Sear the beef fillet in a pan with olive oil, butter, and rosemary for 4 minutes until browned.
Remove the beef and set aside to cool.
In the same pan, add olive oil and butter, then sauté garlic, rosemary, and chopped red onion with a pinch of salt.
Add 600 g of mushrooms and cook for 15 minutes until softened.
Stir in 100 g of chicken livers, a dash of Worcestershire sauce, and truffle oil, cooking for 3-4 minutes.
Chop the mixture and add a handful of dry breadcrumbs to absorb juices.
Roll out puff pastry and spread the mushroom and chicken liver mixture on it, leaving space around the edges.
Place the beef fillet on the pastry, brush exposed pastry edges with beaten egg, and roll it up tightly.
Pinch the ends and seal with a fork dipped in flour.
Glaze the Wellington with egg wash and preheat the oven to 210°C.
Sear the Wellington on the hob for 2 minutes to prevent a soggy bottom before baking.
Bake for about 40 minutes in the bottom of the oven until golden brown.
Prepare gravy by frying two chopped onions for 20 minutes, then adding black currant jam, Madeira, mustard, flour, and beef stock.
