Spicy Ramen

12 cups Quality Beef Stock
1 can of coconut milk
4 packs of Ramen
2 lb Beef-Turkey-Half and half
Salt and pepper to taste
1 orange zest and juiced
2 scallions small chop
1 T about 6 cloves garlic paste
1 tsp ginger paste
1 tsp Thai chile paste
2 T Soy sauce
2 tsp fish sauce
1 tsp spicy sesame oil
2 T chili crisp
1 t baking soda mixed w/ 2 t water
2 soft-boiled eggs (I used Duck)
Grilled baby bokchoy
Scallions
Cilantro
Pickled carrots

Mix together marinade ingredients.

Marinate meat in the mixture for 30 minutes to an hour.

While meat is marinating, bring stock, coconut milk, and sauce mixture to a boil then allow it to simmer on low heat.

Heat a large skillet on medium-high heat then add a small amount of neutral oil along with the ground meat.

Taste and season with salt if needed. Then drain off excess oil and set aside.

Cook ramen according to the package, strain then place it in a serving bowl.

Pour the hot broth over the noodles, then add a half-cup portion of meat to each bowl.

Top with soft-boiled egg, grilled baby bok choy, and other desired garnishes to make it a complete meal!
