2 packs instant ramen noodles
1 tbsp sesame oil
2 cloves garlic, minced
1 inch ginger, grated
2 tbsp soy sauce
1 tbsp chili paste
1 tsp sriracha
1/2 cup green onions, chopped
1/2 cup mushrooms, sliced
1/4 cup nori, shredded
1 tbsp sesame seeds

In a large pot, heat the sesame oil over medium heat.

Add the minced garlic and grated ginger, sautéing until fragrant (about 1 minute).

Pour in the vegetable broth and bring to a simmer.

Stir in the soy sauce, chili paste, and sriracha, adjusting the spice level to your preference.

Add the instant ramen noodles and cook according to package instructions (usually about 3-4 minutes).

In the last minute of cooking, add the sliced mushrooms and chopped green onions.
