Preheat the oven to 350°F.
In a bowl, combine 2 cups of self-rising flour, 3 tablespoons of sugar, and 1/2 teaspoon of baking soda. Stir to mix the dry ingredients.
On a separate chilled plate, grate 4 oz of frozen salted butter using the fine side of a grater.
Add the grated butter to the flour mixture and stir to combine until the mixture resembles cornmeal.
Make a well in the flour mixture and pour in 1.5 cups of buttermilk. Stir until just combined, ensuring no dry flour remains but avoiding overmixing.
Lightly flour your hands and work the dough until it pulls away from the sides of the bowl without sticking.
Flour your work surface and gently press out the dough to about 3/4 inch thick, being careful not to overwork it.
Cut the dough into squares instead of rounds to minimize waste and avoid tough biscuits.
In a bowl, mix 1 egg with 1 tablespoon of water to create an egg wash. Brush this mixture over the biscuits for a glossy finish.
Grease an 8x8 inch baking dish with butter and place 9 biscuits in it, leaving some space between them.
Bake the biscuits in the oven for approximately 20 minutes or until golden brown.
For the remaining 3 biscuits, place them in the air fryer and cook at 350°F until done.
