Grate 6 tablespoons of unsalted butter or cube it and place it in the freezer while preparing the other ingredients.
To make homemade buttermilk, add 1/2 tablespoon of vinegar or lemon juice into a measuring cup and fill with milk or cream until reaching 3/4 cup, then refrigerate.
In a food processor, add 2 cups of all-purpose flour using the scoop and measure method to avoid excess flour.
Add 1/2 tablespoon of granulated sugar, 1/2 teaspoon of kosher salt, and 1 teaspoon of baking powder to the flour in the food processor.
Pulse the mixture a few times to distribute the baking powder, salt, and sugar through the flour.
Add the grated or cubed butter to the flour mixture in the food processor and pulse until the butter is well distributed.
Pour in the homemade buttermilk and pulse a few times until just combined; do not overmix.
Turn the dough out carefully, folding it together to form a flat disc without rolling it out.
Cut the dough into squares instead of using a biscuit cutter to avoid reworking the dough.
Place the cut biscuits on a parchment-lined baking sheet and put them in the freezer.
Preheat the oven to 450°F (232°C).
After preheating, brush the biscuits with a little buttermilk or milk.
Bake the biscuits in the oven for about 12 to 14 minutes, checking after 10 minutes to avoid over-browning.
Remove the biscuits from the oven when golden brown and fluffy.
