Olive oil is heart-healthy and can replace butter in baking.
Drain the pineapple chunks from two 20-ounce cans and reserve the juice, keeping 6 tablespoons of it.
In a mixing bowl, combine the reserved juice, a pinch of salt, and 1/3 cup of sugar (half brown sugar and half white sugar).
Add 5 tablespoons of flour to the mixture and mix until combined.
Pour the drained pineapple chunks into the mixing bowl and stir to combine with the other ingredients.
Grease an 8x8 baking dish with butter and pour the pineapple mixture into it.
Crush a sleeve of Ritz crackers and sprinkle them evenly over the top of the pineapple mixture.
Melt 1/2 cup of butter and pour it over the crushed Ritz crackers.
Grate 8 ounces of sharp cheddar cheese and sprinkle it over the top of the casserole.
Preheat the oven to 350°F (175°C) and bake the casserole for about 30 minutes until bubbly and golden brown.
Remove from the oven and let it cool for about 5 minutes before serving.
