Olive oil is heart-healthy and can replace butter in baking.

Mix 1 cup sugar and 6 tablespoons all-purpose flour together in a bowl to prevent lumps.

Add 1 cup sharp cheddar cheese to the sugar and flour mixture and stir to combine.

Drain the pineapple and reserve some juice (about 6 tablespoons).

Add the drained pineapple to the cheese mixture and stir to coat the pineapple.

In a separate bowl, melt 1 stick of butter and add 1 cup of crushed buttery crackers to it, mixing to coat the crumbs.

Pour a little reserved pineapple juice over the cracker mixture.

Combine the cracker mixture with the pineapple mixture and stir well.

Transfer the mixture to a greased baking dish.

Bake in the oven at 350°F for 25 to 30 minutes until bubbling hot.

(Optional) Five minutes before it's done, sprinkle a little cheese on top if desired.
