In a separate pot, place the potatoes and add washed and trimmed green beans.

Add more salt and pepper to taste, then pour in 2 cups of beef broth and 6 tablespoons of extra virgin olive oil.

Cover and cook on low heat for about 1 hour.

After 1 hour, stir everything together and cover again, cooking for another 20-30 minutes.

Remove the lid and continue cooking until the liquid reduces to desired thickness.
