Preheat the Rock Box to about 350°F.

Drain and heat 2 cans of sweet corn in a skillet until they get some color.

In a mixing bowl, combine 1 block of softened cream cheese, 1 cup of sour cream, and 1 cup of Dukes mayonnaise.

Add 4 sliced green onions, cilantro, and 1/4 cup of lime juice to the bowl.

Mix in 1 teaspoon of garlic powder and chili powder to taste.

Add a whole bag of Monterey Jack cheese to the mixture and stir well.

Add the charred corn to the cheese mixture and mix thoroughly.

Return the mixture to the Rock Box and let it toast for a few minutes until bubbly.

Top with cotija cheese and additional cilantro before serving.
