1/3 cup granulated sugar
1/4 tsp baking powder
1/4 tsp cinnamon
1/8 tsp of salt
1 egg
1/4 cup vegetable or canola oil
1 tsp vanilla extract
1/3 cup crushed pineapple, not drained
1/2 ripe banana, smashed
1/3 cup toasted pecans, chopped and divided
2 oz. cream cheese, softened
1/4 cup butter, softened
1 1/2 cup powdered sugar
1/2 tsp vanilla extract

Grease and line the bottom of a 6 inch cake pan.

Preheat oven to 350 degrees F.

In a bowl, mix together flour, sugar, baking powder, cinnamon and salt.

Add in egg, vegetable oil and vanilla extract. Mix until combined.

Add in pineapple, banana and 1/4 cup pecans. Stir to combine.

Put into prepared pan and bake for 25-30 minutes or until a toothpick comes out clean and the cake begins to pull away from the sides of the pan.

Cool cake in the pan on a baking rack for 10 minutes.

Remove cake from pan and cool completely.

In a bowl, cream together cream cheese and butter. Add in powdered sugar and vanilla until creamy.

Frost cooled cake on sides and top. Sprinkle with reserved pecans.
