Toast SASKO brown bread and blitz in a food processor to make breadcrumbs.
Mash 200 grams of madumbe with a fork.
Combine mashed madumbe, 200 grams of sugar beans, 200 grams of imbuya leaves, 1 grated onion, 1 crushed garlic clove, 80 grams of crumbled feta cheese, 30 grams of chopped parsley, and 30 grams of chopped mint in a bowl.
Add 50 grams of cake wheat flour and mix until thoroughly combined.
Season with salt and black pepper.
Shape the mixture into round cakes.
Coat the fritters in SASKO cake wheat flour, then dip into 2 beaten eggs, and finally coat with the breadcrumbs.
Heat oil in a cast iron pot and fry the fritters for about 3 to 4 minutes on each side until golden brown.
