Heat 1/2 cup olive oil in a pot over medium heat.

Add 4 chopped onions and cook until caramelized.

Add chopped celery, carrot, garlic, bay leaves, chili flakes, and seasoned salt; stir and cook for a couple of minutes.

Pour in 1 cup of white wine and let it simmer.

Add 2-2.5 cups of soaked white beans to the pot.

Pour in 2 quarts of poultry stock and bring to a simmer.

Lower the heat to maintain a simmer and cook for 90 minutes to 2 hours, checking occasionally and adding more stock if needed.
