Wash the callaloo leaves several times in water.

Cut the callaloo leaves into small pieces.

Add water to a pot and bring to a boil with the callaloo leaves.

Start cooking on high heat, then lower to medium once boiling.

Season with black pepper and salt.

Add about 3 tablespoons of coconut oil to the pot for frying after the water reduces.

Move the callaloo around to prevent burning while it fries.

Transfer the cooked callaloo to a bowl.
