Fried Crappie

1/2 cup mayonnaise
2 tablespoons lemon juice
1/4 cup dill pickle, chopped
2 tablespoons fresh dill, chopped
2 tablespoons Southern Sunshine grillin sauce
1 cup all-purpose flour
1 tablespoon seafood seasoning
Vegetable oil for frying
1 lb crappie fillets

Heat oil in a 10-inch Carolina Cooker aluminum frying pan.

In a bowl, combine mayonnaise, lemon juice, dill pickle, fresh dill, and Southern Sunshine grillin sauce to make tartar sauce.

Mix the tartar sauce ingredients until well combined.

On a plate, add flour and mix in seafood seasoning with a fork.

Dredge the crappie in the flour mixture.

Once the oil is hot (around 325°F), carefully lay the dredged crappie in the pan, laying them away from you.

Fry the crappie for about 2 minutes on each side.

Remove the crappie from the pan when golden brown and serve with tartar sauce.
