100 g soft unsalted butter
75 g powdered jaggery
1 teaspoon vanilla
0.5 teaspoon cinnamon
zest of one orange
0.25 teaspoon salt
2 tablespoons milk
200 g whole wheat flour
50 to 80 g chopped fruits and nuts (almonds, cashews, walnuts, black raisins)

Start with 100 g of soft unsalted butter and 75 g of powdered jaggery. Mix until smooth and creamy.

Add 1 teaspoon of vanilla, 0.5 teaspoon of cinnamon, zest of one orange, 0.25 teaspoon of salt, and 2 tablespoons of milk. Mix well.

For an intense orange flavor, zest the orange and rub it with jaggery before mixing with butter and other ingredients.

Add 200 g of whole wheat flour and 50 to 80 g of chopped fruits and nuts. Mix gently until an even dough forms.

The dough will be tough, so you may need to mix by hand at the end.

Wrap the dough in cling film and chill in the refrigerator for an hour.

Roll the dough between two sheets of parchment paper to a thickness of 4 to 5 mm.

Cut out circles or rectangles and place them on a parchment or silicon lined baking tray.

Bake at 180°C for around 15 minutes until the edges turn golden and the kitchen smells heavenly.

Let the cookies cool completely on a wire rack. They will crisp up as they cool.
