1 teaspoon salt
1 teaspoon turmeric powder
1 teaspoon roasted cumin powder
1 teaspoon coriander powder
1 teaspoon Kashmiri red chili powder

Wash the baby potatoes thoroughly several times until well cleaned.

Cut the baby potatoes lengthwise into medium thickness.

Heat a large non-stick pan and add around 1/2 tablespoon of mustard oil.

When the oil is hot, add mustard seeds and cumin seeds; let them crackle.

Add two dry red chilies and the cut baby potatoes to the pan.

Stir-fry the potatoes on medium to high flame for 1 to 2 minutes.

Add salt to taste, a pinch of turmeric powder, 1/4 teaspoon of roasted cumin powder, 1/4 teaspoon of coriander powder, and 1/4 teaspoon of Kashmiri red chili powder.

Mix all the spices well with the potatoes until combined.

Keep the flame on medium and fry the potatoes for another 1 to 2 minutes.

Cover and cook on low flame for 6 to 8 minutes or until cooked through.
