Cultural Context

Fajitas originated in the Tex-Mex cuisine of the United States, influenced by Mexican cooking traditions. They typically feature grilled meat served with sautéed peppers and onions, wrapped in tortillas. 1

Chop one large onion and one pound of bell peppers (any color).

2

Mince three cloves of garlic.

3

In a bowl, stir together 1 1/2 teaspoons of ancho chili powder, 1 teaspoon ground cumin, 1 teaspoon dried oregano, 1 teaspoon garlic powder, and 1/2 teaspoon smoked paprika to make the spice rub.

4

Season 1 pound of chicken breast, 1 pound of flank steak, and 1 pound of peeled and deveined shrimp with salt and the spice rub, ensuring to coat both sides generously.

5

Heat a skillet over medium-high heat and add oil.

6

Cook the chicken in the skillet until the underside is golden, then flip, cover with a lid, and reduce heat to low. Cook for 10 to 15 minutes or until cooked through.

7

Transfer the chicken to a plate, pour any juices left in the pan over it, and cover with foil.

8

Wipe the skillet with a paper towel to remove excess liquid, then add more oil and increase heat to medium-high.

9

Add the flank steak to the skillet and cook for 2 to 3 minutes on each side or until preferred doneness.

10

Transfer the steak to the same plate as the chicken and cover with foil.

11

Add chopped bell peppers, onion, and minced garlic to the skillet with a little salt. Cook until the veggies are soft and starting to brown, scraping the bottom of the pan to lift flavors.

12

Slide the veggies to one side of the pan and add the shrimp. Cook the shrimp until opaque throughout, about 2 to 3 minutes.

13

Transfer the chicken and steak to a cutting board and check for any liquid on the plate. Pour any liquid into the pan with the veggies and shrimp.

14

Transfer the shrimp to the plate, add a little more liquid (tequila, beer, or stock) and fresh lime juice to the pan, and cook for about 1 minute.

15

Take the pan off the heat and slice the chicken and steak, arranging them on top of the veggies. Slide the shrimp into the pan as well.

16

Serve the fajitas family style with your favorite toppings.
