2 plum tomatoes
1 Aji Amarillo pepper
1 inch ginger
8 cloves garlic
1 lb top sirloin
MSG (Aoto)
soy sauce
oyster sauce
white vinegar
black pepper
coarse salt
1/2 lime
frozen french fries
white rice
cilantro
edible orchid

Cut scallions into 1 1/2 inch pieces.

Cut plum tomatoes into 1/2 inch pieces, discarding seeds.

Remove seeds from Aji Amarillo pepper and cut into strips.

Peel ginger and chop.

Smash and mince 8 cloves of garlic.

Cut top sirloin against the grain into 1 inch cubes.

Sharpen knife before cutting meat.

Season meat with MSG, soy sauce, oyster sauce, a splash of white vinegar, black pepper, and coarse salt.

Squeeze juice from 1/2 lime into the meat mixture.

Mix everything together and let it marinate for 1 to 2 hours.

Cook frozen french fries according to package instructions.

Cook white rice on the stove.

Heat Blackstone griddle to high temperature.

Sauté vegetables (scallions, tomatoes, Aji Amarillo, ginger, garlic) lightly on the griddle until softened, then remove them.

Add marinated meat to the griddle and cook, closing the lid to maintain high heat.

Stir meat occasionally until cooked through and caramelized.

Return sautéed vegetables to the griddle with the meat, adding more soy sauce and oyster sauce as needed.
