Cut or rip the cauliflower into smaller florets, trying to get them roughly the same size for even cooking.

Slowly add the milk while whisking until there are no lumps in the batter. The mixture should have a thick consistency, so do not add extra milk.

Add the cauliflower florets into the bowl with the batter and gently mix with a large spoon until all florets are covered.

Preheat the air fryer to 380°F (190°C).

When the air fryer is hot, add as many battered cauliflower florets as you can fit without them touching. Cook in one or two batches as needed.

Cook the battered cauliflower at 380°F for 8 to 10 minutes, flipping halfway through. If the batter sticks, cook for an additional minute or two before flipping.

While the cauliflower cooks, whisk the buffalo sauce with the melted butter in a small bowl and set aside.
