1

Prepare sun-dried tomato pesto by combining oil from the jar, 1/3 cup of pistachios, and 1/4 teaspoon of salt in a blender and blend until smooth.

2

Cut puff pastry into rectangles and then into nine pieces using two cuts vertically and two cuts horizontally.

3

Place the cut pastry pieces on a parchment-lined baking sheet.

4

Brush the puff pastry with egg wash made from one whole egg.

5

Prick the puff pastry with a fork to create small holes for air to escape while baking.

6

Bake the puff pastry in the oven for 10 minutes until lightly golden.

7

Spread a tablespoon of sun-dried tomato pesto on each puff pastry piece after removing from the oven.

8

Layer prosciutto on top of the pesto.

9

Add small dollops of goat cheese on top of the prosciutto.

10

Return the assembled pastries to the oven for a couple of minutes to melt the cheese.
