Start by cooking down 4 onions in roasted garlic, shallot, and onion oil.
Add smoked sea salt to the onions as they cook down.
Once the onions are soft, add a little bit of flour and mix it in.
Pour in cream and add sharp white cheddar cheese, Parmesan cheese, and gruyere cheese to make the sauce.
Slice 10 yukon gold potatoes using a mandolin, keeping the ends on for safety.
Prepare the baking dish by buttering it generously.
Layer the sliced potatoes in the dish, fanning them out.
Pour the sauce over the first layer of potatoes and spread it out.
Add another layer of potatoes followed by more sauce, repeating until all are layered.
Top the final layer with a dollop of homemade mashed potatoes mixed with marscapone cheese, sharp cheddar cheese, cream, and butter.
Sprinkle panko breadcrumbs and Parmesan cheese on top of the mashed potatoes.
Bake the dish until golden brown and bubbly.
