Preheat the oven to 150°C.

Slice 1 kg of potatoes wafer thin using a mandolin for best results.

Soak the sliced potatoes in a bowl of cold water to remove starch.

Drain and dry the potatoes after soaking.

Layer the potatoes in a baking dish, overlapping them like fish scales.

Between each layer, sprinkle salt, pepper, and garlic.

Repeat layering until all potatoes are used, ensuring to season each layer.

Pour 300 ml of double cream and 300 ml of milk over the layered potatoes until just covered.
