Preheat the oven to 150°C.
Slice 1 kg of potatoes wafer thin using a mandolin for best results.
Soak the sliced potatoes in a bowl of cold water to remove starch.
Drain and dry the potatoes after soaking.
Layer the potatoes in a baking dish, overlapping them like fish scales.
Between each layer, sprinkle salt, pepper, and garlic.
Repeat layering until all potatoes are used, ensuring to season each layer.
Pour 300 ml of double cream and 300 ml of milk over the layered potatoes until just covered.
Add a sprinkle of nutmeg on top.
Dot the top with small cubes of butter.
Cover the baking dish with foil and bake in the preheated oven for 30 minutes.
After 30 minutes, remove the foil and gently press down on the potatoes.
Continue baking for another hour, checking for tenderness.
Once cooked for a total of 1 hour and 30 minutes, remove from the oven and let it rest for 10 minutes before cutting into portions.
