Feed the sourdough starter 4-6 hours before use to ensure it's active.
In a large mixing bowl, combine the sourdough starter, water, and olive oil.
Stir in the all-purpose flour, salt, and sugar until a shaggy dough forms.
Knead the dough on a lightly floured surface for about 10 minutes until smooth and elastic.
Place the dough in a greased bowl, cover with a damp cloth, and let it rise at room temperature for 4-6 hours or until doubled in size.
Preheat the oven to 475°F (245°C) and place a pizza stone inside if using.
Once the dough has risen, punch it down and divide it into equal portions for individual pizzas.
Shape each portion into a ball and let them rest for 30 minutes under a cloth.
Roll out each dough ball on a floured surface to your desired thickness.
Transfer the rolled dough to a pizza peel or baking sheet lined with parchment paper.
Spread a layer of tomato sauce over the dough, leaving a small border for the crust.
Sprinkle mozzarella cheese evenly over the sauce and add any additional toppings.
Bake in the preheated oven for 10-15 minutes until the crust is golden and the cheese is bubbling.
Remove from the oven and sprinkle with fresh basil, black pepper, and grated parmesan cheese before slicing.
