280g Whole Wheat flour
10g Salt
3g Instant Yeast
475g Room-temperature water

Place the Whole wheat flour, flour, salt and yeast and whisk.

Add room-temperature water and stir until no dry flour is visible.

Cover with wrap then place it in a warm place for 16-20 hours (preferably 18 hours).

30 minutes before the dough has risen, place the dutch oven in the oven to preheat at 475F.

Fold the dough each side and upside down. Repeat twice and shape the dough into a round shape.

Bake for 30 minutes at 475F covered with the lid.

Put in the oven for 12-15 minutes with the lid off to make a crisp browned outside (extend to 30 minutes for more crisp).

Let it cool for 10 minutes before slicing.
