Start with making the cortido by boiling 1 cup of cauliflower cut into small pieces until not too soft, then cool it down with cold water.

For the pork, use 1 pound of pork (shoulder or any fatty cut), season with 1 teaspoon of salt and optional garlic, and brown it in a hot pan with 1/2 cup of avocado oil until cooked.

Prepare 2 cups of cooked red beans (canned or homemade), sauté some sliced onions in oil until brown, then blend with the beans.

Refry the blended beans in the pan until they reach a sticky consistency.

Prepare the tomato sauce by boiling 3 red tomatoes, 1/4 white onion, 3 stalks of celery, 2-3 cloves of garlic, and 3 bay leaves with 1/4 cup of water and 1 tablespoon of olive oil until soft, then blend and return to the pot to simmer.

For the masa, mix 3 cups of maseka corn flour with 1 cup of water, adding more water as needed until the right texture is achieved (approximately 3.5 cups total).

Wet your hands and take a portion of masa, flatten it, add fillings, and close it up, then flatten again if needed.

Cook the pupusas on medium heat for about 2 minutes on each side until golden brown, flipping as necessary.
