Originating from El Salvador, pupusas are a beloved traditional dish made from corn dough and filled with various ingredients. They are often served with curtido, a tangy cabbage slaw, and salsa. Pupusas reflect the country's rich culinary heritage and are a staple at family gatherings and celebrations. Today, they have gained popularity beyond Central America, with variations found in many Latin American communities worldwide.

Heat olive oil in a medium pan and cut onions.
Cover with a lid until the onions completely char, then remove the onions.
Add refried beans to the pan and cook until thick.
Let the beans cool off.
In a bowl, mix masa with warm water and knead the dough well.
Use Salvadorian cheese or shredded mozzarella cheese, knead until flexible.
Shape a medium-sized ball of dough into a plate.
Add refried beans and cheese to the dough, then close the pupusa carefully.
Cut away any excess dough and shape it into a plate-like pupusa.
Wash the pupusa lightly with oil and place it on a low-medium heated flat pan.
Flip the pupusa on both sides until golden and crisp.
Serve with a cabbage salad and a simple salsa of onion, tomato, and cilantro.
