- 7Drain the curds in a colander lined with cheesecloth.
- 8Knead the curds gently while gradually adding salt.
- 9Heat water in a separate pot until just below boiling.
- 10Add the curds to the hot water and stretch them until smooth and elastic.
- 11Shape the mozzarella into balls and place in cold water to firm up.
