Strawberry Salad

1/2 large-sized red onion
500 grams ripe strawberries or 2 cups sliced
2 cups Arugula
1/3 cup pitted Kalamata olives
1/2 large-sized cucumber
1 head of lettuce, or salad greens
150 grams feta cheese block or 1 cup crumbled
2 tablespoons lemon juice
3 tablespoons extra-virgin olive oil
1/8 teaspoon black pepper
Sliced toasted almonds
2 tablespoons crumbled feta cheese
1/4 tsp chili flakes

Remove the hulls and green tops from the strawberries and slice them.

Thinly slice the red onion and open up the layers.

Cut the cucumber in half, lengthwise, and thinly slice it into half circle slices.

Slice the Kalamata olives and roughly chop the lettuce or any salad greens.

Place the sliced strawberries in a big mixing bowl and add chopped lettuce, sliced olives, sliced cucumbers, and sliced red onions.

Add crumbled feta (use vegan feta to make it vegan).

Drizzle with olive oil and lemon juice, and add freshly ground black pepper.

Top with arugula and toss the salad to coat the leaves.

Transfer the salad to a serving bowl and top with chili flakes, crumbled feta, and sliced almonds.

Serve the salad immediately.
