Place 1 tbs of olive oil into pan and fry onion, garlic, lemon zest, anchovies, honey and cook for 1 minute.

Add vinegar and cook for another minute or until the mixture starts to thicken.

Add capers and cook for another 15 seconds, then turn off the heat and let cool.

Once the onion mix has cooled down, add the rest of the olive oil, then the lemon juice, fresh herbs and salt and pepper and mix well.
